About the wine
Our 2014 Atlas Peak Cabernet Sauvignon showcases aromas of black cherry, candied violet and notes of nutmeg. Flavors of fresh raspberry and sarsaparilla vanilla mingle on the palate with touches of cardamom. This is a big and bold wine with balanced tannins and a long, lingering finish.
After harvesting on September 30, the grapes were fermented on the skins for 44 days with an extended maceration. After a native fermentation, the wine was gently pressed, racked and aged for 19 months in a mix of Demptos and Ermitage French oak barrels, 46% new French oak. Tightly grained, French oak barrels from forests in the center of France impart their oak on wines slowly for a consistent, well-rounded aging process while yielding subtle oak influences to the Cabernet Sauvignon.
