About the wine
Deep garnet purple in color, this 2016 Cabernet Sauvignon has licorice, crème de cassis and mocha aromas with an underlying hint of smoked meat and cardamom. This is a big and rich wine with fine-grained tannins and concentrated flavors of berry preserves with spicy layers and a velvety texture. The finish is long and harmonious with lingering mineral notes.
This wine is 100% Cabernet Sauvignon from clone 4 and the Oakville Ranch Selection. Grapes were fermented on the skins and underwent extended maceration for an average of 60 days to lend complexity and depth to the wine before being racked to new, tight-grained, medium and medium-plus toast French oak barrels for 20 months of aging. Only our best barrels of Taransaud, Baron, Demptos, and Ermitage were selected for this Cabernet Sauvignon. We used 54% new oak and put the balance in once-used barrels. This wine was bottled unfined and unfiltered on July 26, 2018.
