About the wine

Enticing aromas of sun-ripened Morello cherries, wild black raspberries, blackcurrant compote, and a whisper of bay leaf drift elegantly from the glass. On the palate, luscious layers of fruit unfold with notes of velvety black cherry preserves, fine cocoa dust, and a hint of forested earthiness. This robust and richly textured wine is framed by polished, sculpted tannins, supported by a vibrant structure and a lingering, resonant finish.

The grapes were harvested on September 27 and fermented on the skins for 27 days with an extended maceration. After fermentation, the wine was gently pressed, racked and aged for 19 months in 38% new Demptos and Ermitage French oak barrels. Tightly grained, French oak barrels from forests in the center of France impart their oak on wines slowly for a consistent, well-rounded aging process while yielding subtle oak influences to the Cabernet Sauvignon. The wine was bottled unfined and unfiltered.
